Cherry Chocolate Bars



Cherry chocolate bars are a rich and moist variation of your traditional brownies. They are colorful and make wonderful food gifts.

And...who does not like cherries?

Or chocolate...

Say the word around any member of this family and you will garner an instant reaction and complete attention.

Add the word brownie bar and you have them hook, line and sinker.

But what if we pushed the envelope and made cherry chocolate bars?

Thanks to the colorful addition of both red and green candied cherries, these gooey gems are particularly decorative when set on your Holiday season dessert tray.

NOTE: Candied fruit is not available in Harris Teeter, Giant, Safeway, Bloom or Shopper's Warehouse supermarkets in Woodbridge, Virginia except during the holiday season. We checked the customer service desk at these stores and received identical responses - "only available around Thanksgiving and Christmas".

Although Wegman's lists the Pennant brand of candied cherries on their website, a call to the store resulted in the very same answer: only at holiday time. Of course, you can always order them directly from the Paradise Fruit Company website.


In the meantime, I decided to bake up a variation of the very same recipe - still chocolate, still cherries, still red, still green. They are called Brownie Fruit Bars.


Cherry Chocolate Bars


A brownie by any other name...should taste so good. Here it's all dressed up for the Holidays with added red and green candied cherries.



  • 30-40 minutes

  • 24? 12? or bite size squares.

Ingredients




  1. 1 - 16oz. Candied Red Cherries (chopped)

  2. 1 - 16oz. Candied Green Cherries (chopped)

  3. 1 1/2 cups Pecan or Walnut pieces

  4. 1 1/2 cups Flour

  5. 1 cup Brown Sugar

  6. 8 Tablespoons softened butter

  7. 2 Eggs

  8. 8 oz. Semi-Sweet Chocolate Morsels

  9. 2 Tablespoons unsweetened Cocoa Powder

  10. 1 Teaspoon Vanilla

  11. 1 1/2 Teaspoons Baking Soda


Instructions




  1. Preheat oven to 350º

  2. Lightly grease a cookie sheet. Note: the company website lists a cookie sheet but surely this is a mistake. Use a 9x9 or 9x13 pan.

  3. Combine flour, cocoa and baking soda, set aside..

  4. In another bowl, cream butter and sugar.

  5. Beat in eggs and vanilla.

  6. Stir in flour mixture until moistened.

  7. Fold in candied fruit, nuts and chocolate morsels (batter will be thick).

  8. Press into prepared pan.

  9. Bake for 30-40 minutes or until done.
